In case you don't know the carbonara (black pepper) part of it is akin to the "coal miners wife" who would make the dish and often dust from her husbands clothes would drop into the dish. So the extra helping of pepper makes that part of the dish extra yummy.
I try to find the pancetta or unsmoked bacon as it adds a better flavor I think. I have been know to add garlic, onions, mushrooms and wild mushrooms to this dish and quite simply, it is even more delicious with those additions. But it stands alone with just the pasta, pancetta or bacon, parmesan and pepper.
I love this dish and it makes a great side dish too, not just a main course. We like the version with the wild mushrooms with steak or meat of any type also.
