excess grahm crackers . . .

I cleaned my food storage room and discovered two large unopened boxes of grahm crackers left over from the kids chocolate fountain adventure last summer. . . hmm . . .
what to do with them??? we don't really eat them and I don't really makes pies . . . any suggestions for some creative uses?
 
Make Chocolate Eclair Cake!

Layer enough crackers to cover the bottom of a 9X13 pan - doesn't have to fit perfectly
Mix together two 3oz packages of vanilla pudding with 4 cups milk
Fold in a 16oz container of whipped topping
Spread 1/3 of this mixture over the layer of crackers, then repeat to make 2 more layers
Chill in the fridge while you make the topping:
Mix together 1/4 cup milk, 1/3 cup cocoa & 1 cup sugar in a small saucepan, bring to boil & boil one minute.
Remove from the heat & stir in 2 Tabelspoons butter & 1 teaspoon vanilla - let cool then spread over the graham cracker/pudding mix & chill until set - overnight is best

This makes such a pretty cake that looks like it took a lot of work - when you cut slices they look like Napoleon pastry.
Noone has to know how easy it was to put together

Frozen Pudding Sandwiches:
1 1/2 c Cold Milk
1/2 c. peanut butter
1 pkg (4 serving) instant pudding - Choc or vanilla
24 graham crackers

Add milk gradually to PB in deep narrow bottom bowl, blending until smooth. Add pudding mix, beat slowly until well blended, about 2 minutes. Let stand 5 minutes. Spread filling about 1/2 inch thick on 12 of the crackers. Top w/ remaining crackers, pressing lightly and smooth edges with a spatula. Freeze 3 hours before eating.
 
hmm . . . I think I could do something between the two . . . Vanilla Pudding with PButter added, sliced fresh bananas, then the choc topping
 
I had thought of that right away, my mom used to make us those and freeze them when we were kids. But we don't really eat that much sugar in our house now so I was searching for an alternative, but I remember loving those when I was young!
 
Flavored cream cheese instead of frosting? Just a thought, I'm not much of a cream cheese fan so I'm not sure how they would turn out.


Since you try to limit sugar then smores are probably out of the question. That would be a lot of smores.

I also like frosting on saltine crackers. Saltines w/peanut butter is good too.

I would say to make some kind of crust with them for a dessert.

My mom use to make this for us kids when we were sick. Yummy treat. We called it baby food,LOL Put a stack of graham crackers in a bowl. Pour hot milk over it,then sprinkle a little sugar on top and eat it like cereal. It is sooo good!
