Exhaust fan installed

I have a few hinged side panels that I usually keep open with hardware mess covering them...let the coop breath pretty good...plus the main front door (3x2) is wide open..

but my coop is part of a larger fully enclosed run that they stay locked up in at night and they mostly stay out in the open air on a roost while "caged". daytime they free range the backyard.

I'm guessing you only have the coop and they free range?

I'm starting to believe that the shade had more to do with temp drop than did the exhaust fan...But like you said, any extra ventilation is a good thing
Any extra ventilation is indeed a good thing. I battle this every Summer. I suck cooler air in from under the shady trees with one fan and then blow hotter air out with another fan so it doesn't get trapped up by the roof. My temps will drop 5 degrees sometimes just by me switching the fan from low to high. 5 degrees can make a huge difference especially when it's, say, from 95 to 100.

I guess if you count the plywood as insulation, then yes a little.
It will help deflect some heat gain from the metal for sure.

I'm sure the air movement from the fan helped speed the cool down.
