What do duck eggs taste like? Ive never had one. I'm going to try to find some around here to buy. I don't like whites, only the yolks, unless eggs are scrambled or hard boiled. Do they taste like a chicken egg?

It depends on what they eat. If they live in a pond with a lot of snails (like ours do) the eggs taste kind of fishy. Unless they're being hatched, they go for dog treats. The muscovies stick closer to the chicken house and eat a lot of corn and chicken feed. Their eggs taste a lot more like chicken eggs.

One thing you should note is that duck egg whites are very stiff, and the yolks are rather richer than chicken eggs. Because of this, they make very good baking eggs, and rather terrible fried eggs (the white turns into an unpalatable piece of rubber.) In a cake, though, the stiff white helps it set up better.

We do not have a pond -my ducks live in the garden. We eat fried duck eggs all the time and love them (poached too). We also are more yolk people than white and the yolks of the duck eggs are bigger than chicken eggs. The whites have more protein so they have to be cooked slower and at a lower temperature. Covering the pan for part of the cooking also helps keep them from getting too rubbery.

I have muscovies and their eggs taste like a very rich chicken egg. The yolks are huge, and consequently have almost double the cholesterol of chicken eggs. Don't overcook. If you scramble, add a generous amount of milk because as someone else said, the whites tend to be stuff, and the yolk is not as watery/runny as chicken eggs.

Love'em. I have a duck egg over easy every morning on a slice of toast, just to enjoy the pure taste.
