Extra Milk, What to do?

My milk cow calved a week ago and we are getting between 1 1/2 to 2 gallons of milk a day. In 2 milkings we got 2 1/2 quarts of cream. Made butter this morning.

need ideas of what to do with all this extra milk. I really hate the thought of pouring it out.

try your hand at making cheese. There are some fairly easy mozzerella recipes out there. Cream soups ...but you can only eat so much soup. We usually feed our extra milk to the pigs...they love it. You could get a few feeder pigs and feed them the milk and have bacon this summer!
