Extra Roos=Yummy Nuggets

I've done that for years. To make it easier on myself I started taking the ground chicken and putting it in a half sheet pan. Then I score it where I want to cut it. Throw it in the freezer for an hour or so, just until partially frozen, then finish the cuts. Makes it much easier to bread. I also add finely grated coconut or bread crumbs to the flour I bread them with some times to change things up a little. You can also make it into bigger patties for sandwiches.

, you can run the chicken through a food processor, add an egg or so (depending on how much chicken you have), and then form the nuggets with the resulting paste.

I've gotten pretty skilled at doing the "L" shaped nugget from McD's.
