I've done that for years. To make it easier on myself I started taking the ground chicken and putting it in a half sheet pan. Then I score it where I want to cut it. Throw it in the freezer for an hour or so, just until partially frozen, then finish the cuts. Makes it much easier to bread. I also add finely grated coconut or bread crumbs to the flour I bread them with some times to change things up a little. You can also make it into bigger patties for sandwiches.
