Could someone kindly explain how in the world you get F8 Olive Eggers please? Wouldn’t their offspring be every color under the rainbow?

If they were crossing randomly, yes they should be producing a rainbow of egg colors. But if someone has been selectively breeding, choosing only the best olive eggs to hatch, there could be a line of chickens that consistently produce olive eggs.

They are probably trying to produce Olive Eggers that will breed true, just like there are already chickens that breed true for other egg colors (white, brown, dark brown, blue, green). It's the same way any new breed gets created: do a cross, then select & breed among the offspring.
