I steam too. What do you mean by "don't actually boil"?
Boiling is overkill, an egg (as a whole, actually, different parts of the eggs set at different temperatures) cooks at 160, boiling is 212, there's no need to cook it that high for it to be cooked. But the lower the temperature, the longer it takes to cook, so boiling is quicker.

Never thought of this. I might try that to see if it peels easier. How long do you cook your eggs at 160 for?
