Farming/harvesting Emus

So I want to start an emu ranch/farm. I have the land/financial means to do so. I'm trying to teach my kids that living off the land is the best way to live. We are doing a big garden, and already own various types of poultry/fowl, a calf and bunnies.
I just put 13 unrelated Emu eggs in the incubator.
I have a few questions though. I want to be able to harvest the birds completely; oils, leather, feathers, meat, but I can't find anything online instruction wise. I'm dedicated to making this work. Does anybody have any insight on this?

Perhaps look into ostrich farms? Can't imagine they'd be much different
