Favorite "meal in a jar" canning recipes

Hello all! I am looking for "meal in a jar" recipe ideas. I am trying to can and pressure can as much as possible lately so I have lots of convenient meals in the pantry ready to go for when we are busy with our newborn baby soon.

Thus far, I have canned:
Sloppy Joe
Spaghetti meat sauce
Chipotle beef for tacos
Plain pork

Please share any of your favorite recipes here! I am especially looking for recipes that are easy and affordable. Beef has gotten so expensive so I need to start doing some recipes without it. Open to everything though. :)
 
I know you're wanting canning ideas, but mine would be freezing fruit ideas.

We have apple and peach trees (yes, even in Wisconsin) and too much fruit. If you don't have trees, but see a sale on certain fruit, you could buy some up and freeze them.

For instance, core, peel, and slice apples, dip them in diluted lemon juice (to prevent browning, but if you don't mind, it's just for looks anyway), then toss in a bag. We make apple crisp in the winter and the hard work is already done. You could make apple pies too easily.

The same with peaches, except those we just core, slice, and toss in a bag and freeze them. Then when I want some for my yogurt or cereal, I just break off a few and put the bag back, or you could actually make something with those. I'm not a huge baker so that's why I don't suggest any delicious recipes. But I sure love having frozen fruit in the freezer!
 
I have canned chicken thighs. They come out SOOO tender! Easy to make a quick pot pie using cream of chicken soup, half a can of water or milk, a big can of Veg-All or bag of frozen vegs, and canned biscuits. Pop in the oven, go take a shower or walk the dog and bang, it's done. Oh - take the chicken off the bone first!

Thanks! Actually, I have been getting more into frozen fruits lately. I try to find good deals at the farmer's market and freeze what I can.

The only reason I ask for canning recipes is because I feel more secure having them. We've had at least one major power outage every year the past three years - one last year lasting a full week! That one really made me think about switching a lot of my food storage to canning.

Canned potatoes with the skin on are great!

Even the cheapest cut of beef is great canned too! Melts in your mouth and makes great beef and noodles!
