Duckchick2011 is right about the recipe down to the "boil it" part. Don't boil, it will make it tough, simmer it slowly until it is tender.
My mom would make little slits in the meat and put 1/2 inch pieces of bacon into the slits to help keep it moist and juicy during cooking.
