I feed my olive egger chicks pelleted feed, they are barely a week old. At what ages can I begin to introduce them to scratch, cracked corn, etc?

They're still to young for pelleted feed, they should have crumble formula for chicks
As to your question, it's best that they have almost exclusively their formulated feed while growing, treats such as cracked corn or scratch should be less than 10% of their diet, as long as they have access to grit, you can start at about 5-6 weeks.
Think a pinch of treats each.

For a small batch of chicks I put an all flock type pellet, 1% calcium feed, into a blender.

It is surprising how young they can start taking the pellets.
