feed question

I get my feed mixed at a local feed mill so I do provide grit on the side but I have been told by many different people at many different "Fleet and Farm" stores that grit isn't needed with the pre-bagged food they sell today.

No proof, just repeating what I hear.

As a side note, why is it that pre=bagged feed looks.... well... coated in something?? My feed mill feed looks like cracked corn, rolled oats, and powder (assuming that is the soy protein). Mostly corn but nothing like the lumps of ???? that is in my chick starter bags.
