Feeding tips

So right now I have my ducklings (Hatched them on December 14) on a organic chick starter/grower crumbles. I have feed available at all times. When should I switch them to a different feed, which one, and should I keep such feed available 24/7? How old do they need to be to start eating fish? What kind of goldfish?
