Fermented Grain and Milk

I’ve read in the past that some people finish their meat birds on fermented grain and a milk or dairy product. My question is, what type of grain? Is it a grower feed of 22% or some sort of cereal grains? I can get scratch but no one seems to know what cereal grains are. Is this mixture fed as a supplement or total replacement for the last 10-14 days?
 
I never thought of fermenting the grains but Once had too much heavy whipping cream that would go bad in a week so I soaked scratch grains in it and fed it to a chicken I planned on processing in the last week of its life. It was the most tender meat I ever ate. I would love to see someone else who does it correct way with fermented grains reply to this. Although I do not believe that its an economical way to feed a meat bird but when I have dairy products in a use it or lose it situation I plan to use it to feed meat chickens.
