Last time I ate my roosters, they were really tough. Some people say thatʻs part of the rigor mortis. I always hear of people putting them in the freezer. Do they ever eat one right away? Does the meat come out tough? Do you have to refrigerate it for a day?

Rigor Mortis sets in within about an hour after death, and takes about 48-72 hours to pass. Most people will butcher their roosters between 16-24 weeks to avoid the naturally occurring toughness and stringiness that results from testosterone levels and male behavior(chasing hens and fighting with other roosters). So, most folks will process their young roos, let them rest in the fridge for about 3 days, then cook or freeze. Usually slow moist heat is the best way to prepare them. I have heard some folks butcher and immediately freeze, others rest then freeze. I guess the only way to know which is best is to butcher, freeze some, rest some then freeze, and then take one of each out of the freezer and prepare them identically. I don't know which way is best, because I haven't done the head to head taste testing.Aloha,
