I think I know the answer to this question, but I'll ask anyway. I keep my 2 roosters in with my 7 hens, and I know they are mounting them. I'm interested in hatching eggs, but would like to concentrate on eating eggs for now. I don't currently have another pen for roosters or for a hen to raise a brood. Assuming I collect eggs regularly and refrigerate them is it OK to eat fertilized eggs and will there be any noticable difference in appearance and taste.

Thanks.

Yes it's okay to eat them. Unless you know what you're looking for, you would never know they are fertilized. There is no difference in taste. I have been told there is less cholesterol in fertilized eggs, but I don't know the validity of that statement.
