First coturnix eggs today!!

I found four eggs when I went to check their food a bit ago...I think they may even be early. So what do I do with them? Collect to eat... Or test hatch?

I saved up 6 eggs and had my first ever quail egg sandwich with my first eggs.
Then I started saving for pickled eggs, etc.
Then hatching eggs when they were a little bigger.

Yum! Save them up and eat them. Wait until they've laid a bit longer to hatch any eggs, I'd think.

We had quail egg sandwiches for lunch here today -- mixed coturnix & button quail eggs on butter whole wheat toast with a dab of sharp cheddar. You can't eat finer food anywhere.

you can also make a salad with little hard boiled egg halves! makes for very pretty salads and people who have never had quail eggs think they are cute and ask all about them and the quails.

mini deviled eggs are fun too just use a very small spoon to place back in the egg white or a pastry tube.
