That works, the problem is a bird that matures at 10-12 pounds is not going to give you a large table bird until maturity. By the time they mature the meat is not as tender or good.

AI is out as it is gross! As JR said, getting a large bird that can reproduce naturally is a problem. I am not ready to give up on it. BUT it is a challenge.
We caponize/poulardize most of our birds so a medium sized bird is just what we need and we let them mature .....as long as 16 or 20 months. In our opinion these make the best table birds for us and the folks we sell to demand birds that aren't as big as turkeys and pay a super-premium price. Yes, it takes time and is a pain in the rear but it works out well enough for us at $70 to $85 per bird.

Nor would our economy except that we are located close to three very popular ski resorts and what is surprising, two high end eateries in Morgantown, location of WVU, have inked deals for this coming fall with options.

We assured them there will be no increase in price but to the contrary, the more they buy above what is already dealt for, the prices can be far more favorable to their businesses.
