So tomorrow is processing day. I have done rotten roosters and tough old hens but never a cx. Is there a resting period before cooking a cx? I'm so ready for some grilled bird!!
24-48 hrs...but I have heard you can cook them before rigormortis sets in.. about an hour after they died... once rigor set they need to rest until rigor relaxes ..I haven't tried it though
 
Sweet. I can have 3 done in 45 minutes and on the grill tomorrow. I will let you know my results

Not sure that 'sweet' would be the operative word...perhaps the taste of iron. If there's an emergency and/or people are starving, cooking meat that fresh won't kill anyone but allowing it to rest makes for an overall better eating experience...Just my opinion...
 
That's not good pal. When the weather permits(once in a blue moon) I haul dirt from the back of my property. Tomorrow I will get 16cu ft of pine chips for my four surviving Cx. The rest of the flock can get in the coop,it stays dry.

What do you use on the floor of your pens to keep the mud down ?
