The difference in texture and taste is a result of how long it takes to reach the target process weight.They also apparently have more flavor and texture than the cx. I'm getting this info from the hatchery.
Yes, chickens that have had time to actually be chickens actually taste like chicken should taste.I think it the flavor is a result of age too. I just processed a year old Maran rooster that made the mistake of attacking the WWD from behind.... He was warned to never do that again...
He had the best taste, but he was tougher than shoe leather. My mule headed 87 year old mother said she could roast him and he would be tender...She failed.
He was flavorful if we could have chewed him. Chopped him into little pieces and made soup out of him that was unbelievably good.
I know when I raised the CX's to 13-14 weeks thay had more chicken flavor than those I processed at 6 weeks... I think so many people though have been acclimated to the 6 week old CX's in stores the real taste of chicken is off putting to them.
