You have never had duck eggs????


Let me tell you a story about duck eggs,

To begin with you have to know my mother is the cheapest human being to ever live. Matter of fact my Grandfather and my mother invented copper wire by accident. They were fighting over a penny and each was pulling as hard as they could to keep the penny and the penny just stretched to become what is known today as copper wire.. True story, I would never lie!


Anyways, When we were living in Florida , my parents had a winter home about 40 miles from us. My brother and his wife had come down for Easter. We had everyone over to our home. My mother brought potato salad. Luckily for me I do not eat any of her salads because she uses the cheapest salad dressing she can buy instead of good mayo. I do not like miracle whip type salad dressings.

Now back to the story, my brother was eating a big forkful of potato salad. My mother who likes to brag about the good deals she gets and when she gets them, announces to the table " I got the eggs in the salad dressing for free"

I asked her, to be polite, " Where did you get free eggs"

She replies with pride in her voice " They are duck eggs"

Still not concerned about this, after all an egg is an egg. I say " Where did you get free duck eggs" Knowing duck and turkey eggs are more expensive to buy than duck eggs.

She says " well, Jean ( or someone I forget the name) and I were walking around the park and I found some duck eggs, so I took them."

I said "you found a duck nest?"

She replies, " no, I found them just lying on the grass"

I asked " You find these often"

she says" a couple every week"

I say " in the same place/"

She says " no, I have to hunt for them"

I say" do you know how long they have laid in the hot sun"?"

She says" No idea".

My brother went forty shades of grey and green at that moment.

I laughed my bottom section off! However, the idea of just picking eggs you find on the ground appalls me.


Maybe you had to be there. but it was funny.
 
That is absolutely hilarious! Something I could imagine my Uncle saying/doing.

From your story, I do not feel I am missing out on anything...

I too am a mayo snob. Best Foods or Helmans (they are the same brand) only.

Yeah, my mama was so cheap that we never had anything but store brands etc. After getting married, my hubby set me down and told me that there were two things we had to discuss. Pertaining to the kitchen. Okay....... First he didn't care for coffee so strong that you could stand a spoon in.....

and the second was the fact that there is no substiture for Helman's. I didn't know. I was raised on strong La coffee. I did some learning for a while. Buying Crest toothpaste instead of a no name. Shampoo. Deodorant. CHARMIN toilet tissure. Hey, it was a whole new world for me. !!!!!

We have one Drake and one hen we did have 8 drakes and 13 hens before but we sold the rest. Duck eggs are great they are richer than a chicken egg and better for baking.

I did not know they were richer in protein, but I did know they are better for baking, as are
turkey eggs, the whites stand up better and it make way better cakes and frostings.

I didn't know these things about duck and turkey eggs! I love to bake, so very good to know.

Linda- There are certainly a few things that must be purchased name brand! Charmin, Colgate, Helmans, Kraft Zesty Italian, Farmland bacon. Otherwise, store brands for everything else!
 
I didn't know these things about Duck eggs either and I apparently sell them now!

Yes, we are buying the egg biz and are currently travelling twice per day 45 minutes one way to accomplish things. We currently have at least 200 dozen eggs due to low production time to deliver to stores each week as well as duck eggs that we get from the two "extra eggs" suppliers. We signed papers last night and worked today to make the conditions better at the current location. Unfortunately, we have to house them there until we build infrastructure here at our house.

Today, We brought in straw to add to the mud floor. My husband gets 85 gold stars for the work he did today. He captured a ton of hens and broke mud clods off of their feet. He also removed the yucky poopy carpet out of the nesting boxes and added a temporary tarp covering while we wait for turf mats that we ordered. I am really hoping that today we changed their way of life for the better. I really do look forward to getting our infrastructure built as quickly as possible to get the girls all moved to a healthy, clean and safe spot that is closer to home.

I have certainly learned some interesting things that when someone claims organic, cage free, free range and GMO free does not mean the same thing that I would expect.

If I only interject here every couple of days for awhile, please discuss everything chicken as you wish!! I may have time to read stuff but not comment.

I love that you, right after signing papers, did what you could to make the chickens have a happier life! I guarantee they are a bit happier with the small improvements, and will be infinitely happier once they move in to "Hotel Jessica"!

I find my standards for what a label claims rarely match up to the companies standards. Good for you to raise the bar!

Now that I got your heart pumping and blood pressure rising, you can skip your morning run.

If you want a good laugh read the label on "eggland's best". I understand some people like the idea of eating all vegetarian, and that is there right. However, claiming they are feeding the chickens an natural diet of organic grains is laughable to me. A natural diet for a chicken includes all kinds of bugs and small critters.

The cage free part comes from the birds being allowed out of their cages for 30 minutes a day. They are still in a pen or building and not allowed to free range. Even free range birds are not truly free range. It appears if you think your pen is large enough you can call them free range.

I feel guilty if I tell my few egg customers my chickens are free range, so I always add I let them out around 9-10 am and they go back to their coop at sunset. My birds are truly free range during that time, as evidenced by the number I lose to birds of prey. Under industry standard I could probably call them free range inside there enclosed pen as it is large enough for them to be happy.

Those of you that sell eggs, do you have any label or instructions on your cartons? I am thinking of printing some labels for my egg cartons with our phone numbers and explaining why I do not wash the eggs but simply "sand" them to remove dirt. I would also put a label on it to wash the eggs with 110 degree water before using.

What do you think of that idea? It is not required here that I know of. I would hate to start doing something and have some bureaucrat see it and decide everyone has to do that..( In case you have not noticed I am not a big fan of large bureaucratic government).

Edited for content: Ralph, at least tell your SIL about the water test on old eggs. It'll work on duck eggs I'm sure. I found an egg in the sweater I had in the closet that had sit for at least 10 days. I put it in water and it still sit on the bottom. Not even in the middle. So I'm relieved.
