First Run of Cornish Cross Meat Birds and Super Excited!

I don't know about that JR, we only really have Cornish X (which we call Ross Cobbs) or Red Rangers (which we call Hubbards & Sasso Farm Rangers) and even then if you're not buying hundreds of them the suppliers don't want to know.
Luckily I know a guy that imports these slow grow eggs and a few other specialist types from France so I'm getting them while I can, as he will be retiring soon and then I'm stuck !!
This is the 3rd year I've had them and these look about the best yet, so will be keeping a few for breeding.


I have some Red Ranger types due in 3 weeks so will be interesting to compare to the ones you get over in the US.
 
I think we will have a break in the rain for a few days. Going to process a few meaties today and take advantage of the weather. How long should they rest in the fridge before cooking? 2 days? 3? I don't want to freeze them.

We brine ours in the fridge for three days before we do anything else ...eat or freeze. We even brine the capons.

Wow, those are some extreme temps for early June.

So I processed 1 meatie. 4lbs 5 oz plucked, gutted, and wings/feet off. Think I'll try again in a few weeks, I was hoping for bigger birds.
 
raced back home a half a day early because of the heat wave and worries the house sitter didn't really understand the gravity of the situation. ran down to the coop first thing upon arrival to find both water containers and food containers empty ;~( and 30 distressed 3 week old cobb 500 CX, it was 95... and that is hot for Seattle metro, more like august weather! I refilled the water straight away and for the first time saw the group rush the watering containers like they usually do the food in the morning. they literally drank water for 15 minutes straight. I decided to wait to give them food, to give them some time to let the water absorb. fortunately everyone made a quick turn around. today it's a little cooler, in the upper 80's and I've already refilled their watering containers. I thought that by starting these in May I'd be ahead of the heat... every year it seems to be getting hotter earlier here.
 
And wetter. I say that,but i remember distinctively that when i was kid of around 12 the area I live in had extremely wet winters and springs. As for as I can tell the weather patterns here have went back to close what they were 30 yrs ago
 
I bought 6 white leghorns and 15 cornish x but they were all put together and I hope I got them seperated right since I just butchered the meat chickens they r 10 wks old
