First time gutting - so many questions!!

We use to hang pheasants and waterfowl for a few days before cleaning them. French have done it for years. But temp was monitored and kept constant though.
 
It is really a personal choice if you eat her or not. If the meat looked and smelled fine, I'd eat her or a the very least feed her (raw) to my dog and cats. Like stated above, many many hunters don't gut right away. It was common in the past too to not gut for days. I'd rinse well, brine and cook thoroughly.
