Hi,

We have a mean RIR rooster that is sitting in the brooder pen right now. Our Lucy became a Lou

and he just got too mean. I'd like to kill him and eat him. This is our first set of chickens, so we're new to EVERYTHING.... can you please offer some very dumbed-down advice to me please?

Thank you so much,
You guys are always so helpful!

After you have dispatched him slow cook or use him in soup. Unless he is a young he will be to tough and not worth to much trouble. If you need to know how, just search the forum and you will find everything you need to know. Good luck.

and best wishes for great success with your first efforts! A great website to start with is this: http://www.butcherachicken.blogspot.com/ There are also some good threads "stickied" to the top of this section. Give them a look and let us know if you have any other questions. There are a LOT of helpful folks here to guide you through this. Where do you live? Maybe there's a BYCer in your neighborhood who could help. If you live near western West Palm Beach I can show you what to do.

Just killed the meanest rooster I ever had. Chanteclar. He was a about two years old. Three fiftey in the oven for four hours. Very tender. Bast with olive oil or butter.

Lots of us eat most of our roos or at least the mean ones. I cooked a hen who was really mean to the other v=chickens, too.

At 14-18 weeks you can fry them like store bought and they will be great -- just let them rest in the fridge or ice water til rigor mortis passes, around 24 hours. When older they need slow cooking, as someone said. and when really old they make wonderful broth. There is a classic old French recipe, coq au vin, or chicken in wine, that is designed for an older rooster; the wine tenderizes the meat.

two words, chicken sausage

I have a kitchen aid mixer, and got a sausage grinder from bed bath and beyond. picked my own fennel, sage, and dried peppers from last year. It tasted so good my wife got up from the dinner table and ordered 50 chicks.

I just slaughter one of our excess roos the day before yesterday, and then yesterday my DW made some awesome Thai style chicken soup. In fact, there's still some left in the fridge for later

Anyway, back to topic......................Once you've killed it, I would recommend looking for a thread on here which has step by step pictures. I'll see if I can find it, and if I can, I'll post a link.
