If you are frying in real lard or unrefined coconut oil, it will be healthy.
 
Last night I fixed some baked mahi mahi for dinner: placed portion in a greased baking dish, spread a little bit of soft butter on top, then salt, pepper, and dill to season, crumbled feta cheese on top, and finally a sprinkle of panko crumbs. Baked this at 400 F for 10 minutes, then checked the middle - not done - baked another 5 minutes, perfect. I'll do this "recipe" again, but next time I'll go a little lighter on the salt as the feta is pretty salty enough on it's own. I think you could use grated Parmesan or Romano for this recipe instead of the feta.

This was from a package of frozen mahi mahi I bought at Whole Foods and was very good. i will buy it again when I make a trip to WF.
