I cook lunch fro my husbands crew every day and need to make it healthy and hearty (and cost effective) for some really hardworking men.

Todays lunch was my "fish tacos cabo style" as always a big hit.

ingredients:

fish - i use tilapia - season with butter, salt and garlic powder while grilling
greens - shredded cabbage, chopped cilatro & sliced green onions mixed together
cabo sauce - mayo mixed with fresh lime juice, and the sauce from a can of chipoltle peppers in adobe sauce.
Limes - quartered
shredded cheese
corn tortillas - warm them in the bag in the microwave. or wrap them in a wet paper towel and warm in microwave.

to make taco:
place warm tortilla on plate
pile on greens
place fish on greens
squeeze lime over fish
then cabo sauce
then cheese
fold and eat
 
Sounds good! I make my fish taco sauce with mayonnaise, sour cream, and taco seasoning. Sometimes for a quick lunch for just me I will use frozen fish sticks heated in the toaster oven - 2-3 per taco depending on their size. I fix a light slaw with a vinegar dressing to have on hand and I don't put cheese on my fish tacos.
