Males and females will fight with each other by flaring their neck feathers out and bouncing in the air. However, your red and white chicken in the picture appears to be a roo. Only males will get the dark red shoulder patches which your chicken clearly has. A full body shot is better but the one you posted is sufficient enough to say Roo!!!

Also look at feathers on back, also known as saddle feathers.
