The best thing is a thorough cleaning. The next step is a flytrap. You sound like from Down Under with the use Of Chooks. Not sure what you can buy there. This is what I use, plus other home made traps.

thank you so much have done the clean in one of the sheds - they were overdue as I had been unwell and my husband didn't really want to do it lol - have looked up and can get fly traps here in New Zealand - you have been a great help
 
I'm having No See Um issues in northeast Florida. No See Ums go by all sorts of names, but are extremely tiny flies that bite and like open sources of water. They're little devils. My No See Ums were all over the inside and outside of my coop. There seem to be thousands of them.
Last night I put a Black Flag Bug Zapper in the coop.
I also smashed a bunch with a t-shirt.
This morning, most all were gone. The Black Flag Bug Zapper is working nicely. I was able to shake lots of dead No See Ums out of it this morning. The bug zapper will kill more than just No See Ums.
I also just installed a small fan in the overhead of my coop to blow these little devils out.
 
:goodpost: I have a similar zapper that has been with me for over 25 years. Have it inside my garage high up. In summer when garage is open and light is on, mosquitoes swarm in like gangbusters. I close the door for the night and turn off all lights . Turn on zapper and by morning ,,,,,, garage is clear.:thumbsup
Regular fies are not attracted to this zapper light. Moths are.
