Maybe your local 4-H office would have this information. I think there's a certain order of steps they must follow to handle & show their bird, showing off all its different parts. They must remember the "right" way to handle a chicken, such as always taking it out of its cage head-first, same with handing the bird to someone else & putting it back. Sometimes the judges will try to test the kids, hand them a bird backwards, and see if they'll take it or wait until it's aimed the right way. There's also a long list of questions they might be asked, some about chickens & poultry care in general, others about the points of their specific bird. They have to know what breed their bird is, and what the Standard of Perfection is for that breed.
It's supposed to be a good experience for the kids, the judges are supposed to be kind & gentle with them, especially towards the younger kids. I guess a lot would depend on the particular show and judges you encounter. My boys spend a lot of time with our birds and know a lot, but so far they haven't been interested in Showmanship.
