Flourless cookies??

Anyone have an awesome flourless cookie recipe?? I have a SIL that has Celiac disease and can't eat flour and I want to send her some goodies for Christmas along with her kids' cookie box....
 
There is a recipe for peanut butter cookies that taste very good with no flour. I got it off the internet....will post it if I can find it again.

6 eggs 2 sticks butter(softened). 2 cups brown sugar. 2 cups white sugar. 2 teaspoons vanilla. 4 teaspoons baking soda. 3 cups peanut butter. Cream these together then stir in. 9 cups old fashion oats. 1 cup M&M's. 1 cup chocolate chips.
Bake at 350 for 8 min until lightly brown if they look not done they are done lol

Makes 8 to 10 dozen
 
There are several recipes for peanut butter cookies with no flour on the internet. The one I used was very simple:
1 cup sugar,
1 cup peanut butter (smooth or crunchy),
1 egg.

Mix until smooth and roll into balls. Place on greased cookie sheet. Flatten with a fork in a criss cross pattern. Bake 10 min at 375 degrees. Loosen with spatula and cool 5 min on cookie sheet before removing.

There are alternate flours that can be used by people with celiac disease and these work fairly well in other recipes. Rice krispie treats, etc might also be okay.
 
OOOOoooooH!! I have some- I'll have to dig them up- it's time to do that for Christmas anyway.

My little sisters both have Celiac, and I'm fairly certain both my older sis and I do, but no physical symptoms.

I have one handy, but it's an old family recipe, so it may be unusual...though most gluten-free recipes are.

Gluten-Free Meltaways


These need to be small enough to fit in the intended mouth, as they crumble obnoxiously. They don't rise, and melt in the mouth blissfully- very rich, as you can imagine.

1/2 # room temp butter
1 1/4 c. cornstarch
1/3 c. powdered sugar
1 c. all-purpose gluten-free flour (Bob's Red Mill is good)

That's it!!

You mix together the dry ingredients and then cream in the butter. Roll into walnut-sized balls and bake at 325 for just long enough for a slight golden tinge, then pull out and cool- don't touch until cool!! It's usually about 12-15 minutes.

Glaze lightly with powdered sugar moistened with milk or cream- food coloring makes this fun; we always made several colors and addes sprinkles or colored sugar to a few.

That is also for a small batch, as the gluten-free flour gets weird if you make a bigger batch all at once.

For the regular recipe, which makes a million- though you may want to make a small batch until you've tried them:

1 1/2# butter
4 c. cornstarch
1 c. powdered sugar
3 c. sifted flour

Make the same as directed above.

Some people with Celiac don't include oats in their diets. Some controversy there...The 1 c peanut butter, 1cup sugar, 1 egg recipe is really good. You can add Hershey's chocolate chips, as well.
 
I went and looked an had the recipe written down different on another card- I changed it to what I THINK is correct...

Betty Crocker is making GF mixes now, sold at Target- can you believe it!?!?!?
