Fodder from whole seed scratch

I grew fodder yrs ago with my first flock and now want to grow for thwse girls over the winter. I have been experimenting with all whole seed scratch from Nature Crest. We also now live in Northern Ga.
Twice now as soon as it starts to sprout,fuzzies start. I have it indoors, however we do have the ac mostly off now with temps occasionally reaching 80.
What gives? Do I need to put something in the initial soak water?

Plastic sprouting trays...which I feel are not draining well enough

Have you tried moist paper towels in a sealed plastic bag? I use that method for most of my peas I give my ducks
