Our coop has a ton of ventilation. Lately though it's been really rainy and humid, and when I woke up and let the girls out of their coop this morning, both windows were foggy with moisture. Should I leave a window open at night since it's been so humid?

If, the rain isn't blowing in through the windows, adding to the humidity, I'd leave them open. Hopefully, your chickens can roost in an area of the coop out of the direct breeze. Chickens can handle very cold temperatures, as long as they can get out of the wind and wet.

One windows lets a little rain/ breeze in, the other is situated so it really doesn't. It's about 45 at night here... so not too cold...
