Non forced fed duck/goose liver is generally marketed as "Fatty Liver" grade 1 or 2. Bascially they get it by fattening ducks/geese without the forced feeding, which prior to going into winter the animals start putting on a lot of fat. I've certainly seen 'humane' and 'ethical' fois gras on many restaurant menues, I just can't remember the names of the farms who were providing it. It seems to me it was coming out of California somewhere.
 
If Fois Gras is the deliberate diseasing and fattening of the liver... how can you "humanely" raise it?

I JUST saw your post Greyfields.... makes sense... it wouldn't be the same as the other, but I can see where it would come close without the inhumane treatment. Interesting.

My understanding (I could be wrong) is that to be called "Fois Gras" it must be forced fed. Otherwise it is just fatty liver. I remember there was a ruckus in recent years where a US raised "fatty liver" won a blind tasting in a European "Fois Gras" tasting.

Aaaarrrggghhh....I watched Top Chef last night and didn't even know what Fois Gras was. Thanks for the heads up. Am glad he didn't win. Sad what some humans do to animals.

Besides, we are not talking about lifeless. Ducks and geese used for foie gras are very much alive during the process of creating it.
 
This is very interesting. I can see how plain old Fatty Liver would be exceptable, at least for me. From the sounds of it, Fatty Liver is just letting the ducks/geese gorge themselves on fatty foods. I personally do not see that as cruel, simply because the animals are enjoying the eating and they probably won't live long enough to feel the affects of their poor eating habits.

The forced feeding, I'm totally against. A liver 10 times the size it should just sounds painful. If the animal cannot eat that amount of food on it's own, it's for a reason.

So, Fatty Liver exceptable by my standards, but the forced feeding for Fois Gras is a no-no in by my book. Just like eating live animals(fish, monkey, etc) is a no-no. I remembered watching something when I was younger and it just made me cry and cry and cry, I remembered a group of people sitting around a table taking forkfulls of meat of a fish still gasping for air on the plate. Just my opinion.
