I love cucumber sandwiches too. Not really weird necessarily but they're awesome. I use sourdough bread, tzatziki dip from the store spread on the bread, and sliced cucumbers with some dill and garlic sprinkled on top. So refreshing. :p
English cucumbers?
 
I've always loved green onions and peanut butter. Dipped or as a sandwich. I can't get anyone else to try it though 😂.
And cold cucumber soup in the summer. Just fresh cucumber cut into match sticks with a little seasoning in the broth, and sometimes a couple ice cubes...but always chilled and fresh.
My DH loves onion sandwiches. A thick slice of onion and a little mustard. I have to admit to avoiding a kiss for a bit after he eats one of those 🤣
 
Anyone else enjoy pepper as much as salt?
When a recipe calls for "X" amount of salt and "1/2 X" of pepper, I just go ahead and add X of each.
And those tiny packets of S-n-P that come prepackaged with silverware and a napkin, I grab 2 so I have enough pepper.
 
I don't think anything I make counts as quirky anymore. Lots of experiments when I was in college and broke. Like "toss a can of tuna in a pot of mac and cheese and have 2 or more meals from it" or "creative ways to not gag while eating bologna" or "100 things that don't cause you to die inside on your 4th day straight of ramen".

Probably the closest I get to quirky now is an occasional peanut butter and jelly with some cinnamon apple butter added.
