i think you have found a new hobby that looks so good well done mate.
i want to know how your rub works out for you so i can try it.
 
well i have some chicken wings in the smoker ATM to try out some different charcoal.
i am sure the charcoal i have been using is rubbish full of fillers.
if i don't like this am gona try wood lump.
 
Well, I went and did it. I smoked some eggs yesterday. They still need to sit in brine just a little longer (didn't have enough notice) and took about 10 hrs in the smoker, but they came out OK. Pics of the smoker and the eggs are at fearlessfarmfrau.blogspot.com.
(we also did a rosemary/sea salt rubbed chicken and a beef roast. YUMMO.)

the wings was a success and i found my problem. here's a pic for you.
it was the charcoal that was giving the food a yaky taste.
so don't buy charcoal from tesco. the charcoal i am using now is Bar-B-Quick.
i did not add any flavors the the chicken wings they were Yum.

 
Thanks, H4ppy-Chris! I'm also blogging for CAPPER's and Grit magazines if you want to check them out. I discovered yesterday that my newest favorite snack is that crispy smoked chicken skin. YUMMMMMMMMM! I've got a craving for it now, so I might have to go out and fire up the smoker again.

I'm loquatious tonight. We tried charcoal. Avoid it like the plague. It DOES leave a manky taste. We usually use applewood (since our neighbors have an orchard that they prune) but hedge and locust work well too.
 
glad you found the cause, there are only a couple types of charcoal that I will use sold around here.

i can't use just wood on my smoker, the charcoal i am using now leaves no taste
