Funny You should mention gumbo. We cant wait until the weather gets a little cooler to start the gumbo "season" and to tell u the truth if I have to turn down the thermostat on the A/C to get it cooler I may do that soon. We generally don't make it until its cold out. I will tell you that after several generations of 100% cajun ladies teaching me the ropes i make a mean chicken (oops can I say that here)
