We lost a Easter Egger for about 2 days.

Then she return to the coop. She ate and drink the ran off.

I tracked her to the thick weeds and found 10 or more eggs. I did not touch anything.

Because She is setting on the eggs. What should I do?

If you want the chicks let the hen continue brooding. Thick weeds and predators go hand in hand. You risk losing the hen if you let her brood there. If you move her she may abandon the nest. Moving a hen and nest works best if done in the dark. Good luck.

Can the egg be eaten, Are they safe? I would hate to crack one open and find something other then scramble egg.. you know what I mean..

For me I would not eat the eggs. If she has been sitting for at least 2 days they could have development in them if they are fertile. Although it would only be some development and not a full chick I wouldn't eat them.
Here are some pics of egg development ~ https://www.backyardchickens.com/web/viewblog.php?id=230

Do you have a rooster?
If not, then the eggs are not fertile and won't hatch anyway.
I wouldn't eat the eggs either way.

Lots of options if you have a broody hen and want her to hatch for you.
If you don't want her to hatch, break her of her broodiness.
