My sister sent me this article. They have tested eggs from pastured chickens and compared results to caged chickens.

Testing found that, compared to official U.S. Department of Agriculture (USDA) nutrient data for commercial eggs, eggs from hens raised on pasture may contain:

• 1/3 less cholesterol
• 1/4 less saturated fat
• 2/3 more vitamin A
• 2 times more omega-3 fatty acids
• 3 times more vitamin E
• 7 times more beta carotene

Thanks! I sent the link to my egg customers. It helps justify the $3 a dozen I am charging (no one is complaining a bit about the price though).
 
This agrees with a book my wife just read and I started reading called Omnivore's Dilemma. The author follows four "typical" meals from start to finish, i.e. the origins of the foods all the way through the industrial food chain until they end up on the plate. Some disturbing revelations made my wife and I glad we have our chickens. He discusses the inaccuracies in the "free range" label you see on most grocery store eggs and agrees that, to get truly free range eggs, you have to buy from a local farm -- or RAISE YOUR OWN CHICKENS, of course!
