Jen, yes they are my first turkeys, they will be coming in on the 13 of July. I am not sure if I'm going to be a good turkey mom. I ordered 15 (mini), there will be 7 Broad Breasted and 8 Midget White Turkeys.
Not complaining, but eeek, I still have chicks in the house also 4 keets, 25 meaties in garage and the young birds cannot go with big birds yet...ugh. And it keeps raining! UGGGGGh! lol.

I do want to plan on making enough for freezing. I like turkey sausage when I pick it up, a lot less gristle.

We ate some last night, the meat was more like some quail we had not too long ago. Since they are not "meat" bird, the musculature is more "muscley" if that makes sense. I didn't find them to be stringy. Although, the brine made it more salty than I prefer. I don't add salt to anything when I cook.
