Freezing baked goods

Can anyone tell me a good way to freeze baked goods, especially sweet breads like zucchini? I am getting a ton of zucchini and am planning to shred and freeze some for baking later, but I would also like to freeze some loaves of bread. I just hate how when they thaw the top of the bread is all gummy and sticks to everything. Does anyone have any hints on how to avoid that? Any other hints on freezing other baked goods such as gump bread or other breads? Thanks in advance

I use Katy's lighter than air bread recipe. I make rolls instead of loaves of bread, since its more convenient for me to take a couple of rolls out of the freezer when I need them. I dont use a whole loaf before it has a chance to go stale. I just put the rolls in a large freezer bag; they freeze really well. When I want one, I thaw it for a little bit, then pop it in the microwave for 10 seconds. Tastes like fresh out of the oven.
 
I freeze alot of "quick" breads (banana/peach) and haven't noticed any issues when I thaw them. I let them sit out until they are cooled completely before putting them into a freezer ziplock bag and freezing.
 
I used to work across the street of the Culinary Institute of America (CIA) in Napa Valley. The school specialized in pastry. I asked the same question of pastry chefs there and the answer was to TIGHTLY wrap in plastic wraps 2-3 times, then in foil. Thaw in refrigerator if possible and should not have any sweating. That is how I do all my zucchini bread and comes out moist and perfect every time.

Reminds me that I need to pull out some frozen shredded zucchini and get some bread made.
