French Bread.... It Worked with Pics Recipe added

I took all the advice and tried again last night. It came out really well.
I forgot to take pics through the whole process but here are a couple

MMMMMM Yummmm!!!!!!! It smelled wonderful baking.

I used non-iodized salt this time, greatly affected the rise, it was much better. Also added 1 cup boiling water to a skillet, turned the oven to 25 degrees hotter than baking temp, added water and then bread, shut door then turned oven back to baking temp.

After 2 failed attempts this turned out really good.

French Bread Recipe:

6 Cups Bread Flour (personally I only used 5 cups)
2 1/2 pkgs Active Dry Yeast
1 1/2 tsp non-iodized salt
2 cups warm water
1 Tblsp Cornmeal
1 egg white
1 tblsp water

In large bowl combine 2 cups flour, yeast & salt. Stir in 2 cups water & beat until well blended. Use a wooden spoon to stir in as much remaining flour as you can.
On lightly floured surface, knead in enough flour ro make firm dough that is smooth and elastic. Knead 8-10 minutes.
Shape into a ball, place in greased bowl & turn once. Cover & let rise in warm place until double.

Punch down, divide in half. Turn out onto lightly floured surface. Cover and let rest 10 minutes. Roll eachhalf into a rectangle, roll up from long side. Moisten edge with water to seal, taper ends.
Grease larhe baking sheet, sprinkle w/ cornmeal. Place loaves on sheet seam side down.
Lightly beat egg white with water, brush on loaves.

Cover with warm dam cloth. Let rise until double (35 - 40 minutes)
With sharp knife make 3-4 diagonal cuts, about 1/4" deep, across each loaf.

Preheat oven to 400, boil one cup water and place in ovenproof skillet/dish. Place water in oven on lowest rack. Place bread in oven in middle of oven. Shut door, turn oven down to 375.
Bake 20 minutes , brush again with egg white, bake additional 15-20 minutes until golden brown.

my next project is learning to make Black Russian bread! expanding my horizons a bit!

I may play with Fondant, not sure.

I am the only one who likes dark bread , but I would love the recipe for Black Russian, sounds yummy

i'll try the recipe out and we can see if it's worth passing.

i also want to learn to make crackers! just seems fun.
