Totally unrelated--what goes with duck? I was going to try goose, but sticker shock killed that idea ($56??:th ) So no announcing that everyone's goose is cooked:(

I'm also making a ham, which I've made tons of times, and I've got the sides for that-- http://www.ayearofslowcooking.com/2010/10/very-best-brussels-sprouts-ever-slow.html and http://www.ayearofslowcooking.com/2008/01/companys-coming-potatoes-augratin.html (both absolutely wonderful) but I have no idea what to make to complement the duck. Since I already have a potato dish, I think roast potatoes, even with duck fat, would be a bit much... And both my crock pots will be occupied, and the duck and ham will both be in the oven, so not a lot of room there...

I have found a good recipe/method for the duck itself, so I don't need any help with that:thumbsup

Czech are big duck eaters. Every year we go down for the huge Czech festival in our state. The old church we always eat at serves duck with sauerkraut dumplings, creamy cucumber and onion salad, any rye bread.
