Fresh mulch?

Absolutely. They will love it.
So I don't need to let it sit for a while before using? I can just chip and spread? That would be awesome! I thought I would have to let it dry first. I have a separate area for there run that I will be letting them out of everyday. The mulch will be strictly for there coop which is concrete.

No need to dry them first. Won't take long for them to dry in the coop. I've got a arborist friend that I get chips from. They go from the coop to the run when dirty.

Weeellll...a bunch of freshly chipped wood, especially if they contain lots of green leaves, may create a petri dish for molds, which can be toxic in quantities. Letting them age a bit and/or scraping the outer layer off the pile and/or spreading the chips in thin layers might avoid that scenario

Really? Never had any mold or humidity issues?
 
Best to let chips age out if possible. Aspergillus is a possibility in fresh chips, and fresh chips (depending on the wood) can also ooze sap or be much more aromatic due to oils needing to dissipate.
