Freshly harvested red potatoes questions

I'd forgotten until now, but it seems like mom used to cream them with............peas? onions? Can't remember now, but whatever it was, I LOVED it.

It's the only potato I will let hubby plant anymore in the garden. Have 5 rows and just started digging in them. We store ours in the garage where it is cool, no washing but do dry them off if they have dirt on them. They are usually all gone by early Nov. as we share the crop with the kids.
