Fridge Freezer Q

Here, there, and everywhere...
I want to let my birds rest in the fridge for a couple of days before freezing them, I have an extra fridge out in my barn just for this purpose.
Can I vac seal them up and then let them rest in the fridge or should I let them rest, then vac seal right before I put them in the freezer?
Sort of confused on that...
 
Either should work. Letting the meat rest doesn't mean you need to leave it open to air. You are allowing a natural chemical reaction to occur, letting the initial rigamortis to relax away and returning the muscle to a relaxed state.

I personally find that it is easier to pull the pin feathers if I wait until after I have allowed the bird to rest, so I usually wait on vacuum sealing unless we skinned the birds.
