Please people, giv me recipes for fried chicken.There was some for marinating...
 
I'll be watching this thread carefully. I stink at making fried chicken.

I cheat when I make my coating but everyone loves my fried chicken. I start off with the new herb and Parmasean shake and bake. To that I add 1 cup of flour and 1 cup of corn meal. I then add some of my own spices, onion salt, garlic powder,paprika,etc. I shake and then make a egg and milk wash. I dip the chicken in the egg mixture thenin the bag of the coating. I refrigerate the coated chicken for 15 minutes then fry. I have an old electric fry pan that I use and usually cook it for 7 minutes on each side at 400 degrees. I have also used the stove and cooked it about 8 minutes each side.

gritstar - I suck at fried chicken too & my Mom's was wonderful, so it is NOt genetic

Your oil is too hot if the breading burns and the chicken isn't cooked - that much I know...not that it helps me.

I have Fear of Frying - either oil is too hot & I get your result, or it's not hot enough and the breading falls off.

I let KFC or Popeye's do my chicken frying - luckily the local grocery also makes a pretty good fried chicken they sell cold and it reheats in the oven beautifully.
