Frozen eggs?

Quote:
I use any frozen eggs for *something*--even if it is just to scramble them and feed them back to the chickens! But, yes, a frozen egg that hasn't cracked the shell can be thawed and used w/o any worries at all. A cracked one might pick up bacteria from the flock, so I usually feed them to the dogs or back to the birds.

This winter is my first use of a new/second coop with a large south-facing window and I have kept a little thermometer in there that registers high and low temps. I am finding that this coop stays significantly higher in temps during the day and a little higher at night, as well (it is well-insulated) and that eggs aren't freezing in it. Gotta love passive solar!

If you are thoroughly cooking eggs the risk of getting sick really is minimal even with a cracked egg. An egg that isn't cracked has nothing wrong with it and you can store and eat it like normal. They just don't always cook the same after being frozen. An egg that's cracked and clean should still be safe but may pick up bacteria easier so if you store it you are more likely to end up with a rotten egg. You still should not get sick if you thoroughly cook it. I might not use it in any dishes that called for eggs which weren't thoroughly cooked but if I were making eggs that day I would have no problem using a clean cracked egg. A cracked egg with dirt on it is definitely contaminated. It will go bad in storage quite quickly. Again if you thoroughly cooked it you still shouldn't get sick but I have enough eggs I don't find it worth trying to save dirty ones cracked or not. Even if the risk were low there's no point to taking it. The dogs enjoy them before they go bad.
