When it's this cold out (-3F this morning!) I assume the eggs I gather in the evening are frozen solid - they are like ice cubes to handle.
I just leave them at room temp & use them like any other egg.
FWIW, I don't refrigerate my eggs.
Sometimes it seems to me like the yolk texture is a bit off or the white is thinner than usual but the flavor is the same.
